I have been in the meat business over 40 years & have tried numerous different methods, machines, @ stones. The "Edge Pro" is by far the best piece of equipment out there, for a sharp knife every time. No hit & miss, this is as good as it gets. The quality of the machine, right down to the carrying case, which I would recomend you purchase if you are buying the Pro Model. Last but not least, Customer Service. You get to talk to the owner & Inventor. Very pleasant & helpful. Even after the sale.

Without question this is the finest sharpening system I've ever used. You can't fail to get a razor edge every time on every kind of blade on every kind of steel.
