Every kit is built around a repeatable sharpening angle that holds a consistent angle for you, so you can focus on pressure, strokes, and burr control instead of guessing. Resharpen hardworking chef’s knives, hunting knives, and keep everyday blades razor sharp with the same setup. Use our Hard Polymer Strop, or Ceramic honing rod for quick touch ups.

Types of Knife Sharpening System

Angle guided systems take the guesswork out of knife sharpening by holding the blade and stone at a consistent angle. Our platforms are built around sturdy hardware, quality stones, and thoughtful ergonomics, so your hands stay steady and your edges stay repeatable session after session.

Apex Series

The Apex knife sharpener is the classic portable rig many users picture when they think of an Edge Pro system. A stable table supports the blade while you sweep a sharpening stone across the edge, keeping a consistent sharpening angle.

This layout works for kitchen knives including both chef’s knives and thin Japanese knives, pocket knives and heavy duty camp blades. You choose the progression, from extra coarse repair work to ultra fine stones, ceramic honing rod, polishing tapes or hard polymer strop with your preferred abrasive.

BevelTech Series

The BevelTech knife sharpener keeps the same focus on control, while adding heavier-duty hardware and expanded adjustment and precision features for serious enthusiasts and commercial sharpeners. Built to handle any blade, the BevelTech delivers a repeatable angle with a solid, confidence-inspiring feel.

All stone options are transferable between the Apex and BevelTech. With a controlled sharpening angle you can make deliberate strokes that deliver professional precision every time.

You can sharpen kitchen knives - chef’s knives knives, paring knives, bread knives, santokus, nakiris, boning knives, fillet knives, utility knives, carving knives, slicers, cleavers, hunting knives, skinners, survival knives, bowie knives, pocket knives, drop points, clip points, spear points, tanto points . . . pretty much any knife. With the right technique and abrasive, you can restore knives from budget pieces to premium super steel.

Each system will have a vertical rod with markings to help get your sharpening angle dialed in. You choose your preferred angle based on knife style and use, then lock it in. As a GENERAL recommendation you can set to 21 degrees and sharpen most knives. Exceptionally thin blades you can set your sharpening angle a little lower, and thick blades you will want to set higher. Lower angles create a sharper, more delicate edge for slicing. Higher angles create a more durable edge for chopping. We feel that 21 degrees is a happy middle-ground for most knives. It’s also worth noting that lowering the sharpening angle on a knife means you will be removing more material and will take longer to sharpen.

The basic kits (example Apex 1 and Apex 2) ship with a progression of quality stones that cover moderate repair, and refinement. The bigger kits (Apex 3 and Apex 4) include more stones expanding on both ends of the spectrum. A coarser stone for reprofiling, everything in between, and finer stones for a superior finish.

The Apex and BevelTech models are designed primarily for sharpening knives. If you add the scissor attachment to any model you can greatly expand your sharpening capabilities to include scissors, hair styling shears, loppers, pruners, planer blades, hand planes, and chisels.
