The coating protects the aluminum from dings and scratches so your polish tape will have the best surface to adhere to, and give you conistent and predictable results.
The hard anodized polishing tape blank is used as a mounting platform for the polishing tapes. The polishing tapes adhere to the polish tape blank, then the polish tape blank mounts in the stone arm so it can be used like a stone.
Years ago we made the polish tape blanks from two pieces of aluminum extruded bar. The next breakthrough was one piece of aluminum extruded bar with a 1" X 6" piece of glass glued to the top.
Now our blade sharpener tools are on the next level! The new modern anodized aluminum blanks are made from one solid piece of fully machined aluminum. The top surface has been machined to be as flat as possible. The Edge Pro logo has been engraved on the back so you know we must be proud of it!

Tape Mounting Blank (Anodized)
If you are going to buy polishing tapes, then I would recommend spending the extra $3/blank for the anodized blank as it is noticeably tougher.

Cosmetic damage on arrival
All three of these "hard anodized" blanks arrives with damage to the anodization on the sides of the blanks. Two of the three have multiple shiny patches where it looks like they were gripped with a hard steel tool with serrated jaws. I'm not sure if this is going to compromise the coating over the long term, but it sure doesn't look good right out of the box.
