The Edge Pro Professional Model is the fastest and most versatile hand sharpening system available anywhere. It adjusts from 6 to 33 degrees, and infinitely in between, with indicator marks at the most commonly used angles. The Edge Pro 3 professional knife sharpener kit will sharpen any length blade up to 5 ¼" wide. This knife sharpening kit comes with the items listed to the left.
There are a few key components of this machine that gear it towards commercial sharpeners, and genuine sharpening fanatics. The heavy duty vacuum base will stick hard to any flat surface, and has an adjustable work height feature that makes sharpening for long periods of time more comfortable.
It has a patented ramp system that allows the entire length of the stone to contact the edge when sharpening, this results in stones that stay flat longer, and last longer. The front stone holder is also spring loaded which makes changing stones fast and easy.
You may consider upgrading with a Scissor Attachment when you purchase the Pro. With 130 degrees of adjustment it will give you the ability to sharpen any scissor, hair styling shear, plane blades (up to 2 ¼" wide), any length planer blade, loppers, pruners, flat chisels, and most gouges.

I spent a considerable amount of time researching the various sharpening systems on the market before deciding on the Edge Pro Professional. While unboxing the Professional, it immediately became apparent to me that I had made the right decision. The care and attention to detail that goes into this product is nothing short of amazing. Once I had the sharpener in my hands I went from thinking "how can this thing cost this much?" to "how can this product be produced at this price?". Probably the most amazing thing has been the customer service I have received since my purchase. My sharpener arrived with a small blemish, that was most likely purely aesthetic. When I called about it, one relatively brief phone conversation and an emailed picture resulted in a new part in the mail, with no hassle at all, and Ben taking several minutes of his time to talk through and provide some pointers on an an issue that I was having bringing my knife tips to a point. Awesome Product!
I've been researching the Edge Pro (as well as the competition) for about a month now, after watching one of my friends using the Edge Pro. After all that research, I decided upon the Edge Pro. My next decision was whether to purchase the Apex or the Professional. I've never used anything other than an electric sharpener so I am quite new to sharpening with this method. I won't be starting a business sharpening knives; I am simply an avid home cook that wants sharp knives. So the Apex is more than enough for me. However, I am also an engineer and I just love the look of the Professional, as well as the added benefits of it over the Apex. After debating with myself for quite some time, I just bit the bullet and bought the Professional. This thing rocks! I love the solid feel of this thing. Once the panavise is locked down, this thing isn't moving. Rock. Solid. I poured over all the instructions and the videos prior to receiving this sharpener, so I was prepared to dive right in the second it arrived. I even bought a cheap $25 chef's knife as a guinnea pig. The guinnea pig knife came out pretty darn good considering it was the first one I have ever done. Took longer than I expected, but that is because I took my time. I checked and rechecked angles, used the sharpie between stones, used the stop collar, etc. And I went SLOW with the stones, which according to Ben, is the best way to sharpen. You remove more material when you cut slowly. All those videos where people are cranking away as if they are on their 15th espresso... yeah, just ignore them. They are doing it WRONG and are spending way too much effort for very little gain. What they are doing is actually smoothing or glazing over their stones so they don't cut as effectively. Slow is the key. I have now just finished up the last of my kitchen knives (save one) and every single one of them came out scary sharp! I have done 4 chef knives, 2 santoku knives, 2 carving knives, 3 small paring knives, 2 meat cleavers and a very small pocketknife (without the small knife attachment). If you are worried about not being ambidextrous, I can tell you that it's not as hard as you think. Take your time, go slow and you'll fall right into a rhythm. Not much force is needed. You'll have a tendency to grip the heck out of the knife to hold it to the table, but after time you'll realize you really don't need all that pressure. And let the stone do the work. You don't need a great deal of downward force! The weight of your arm is enough to cut effectively. The quality of the Professional is outstanding, the tolerances are pretty tight and it does a kick ass job of sharpening! This thing just exudes confidence! I'm more than satisfied with my purchase and look forward to maintaining my now razor sharp knives! Oh, and if you think you will only sharpen your own knives, think again. Now my co-workers want me to sharpen their knives and my family is asking me to sharpen theirs... Maybe I'll have a side business after all...
I have tried several ways to sharpen knives - slow speed wet wheel with specialized jigs, free handing it on wet stones, ceramic rods etc. The Pro Kit 3, by far, gives the sharpest blades with the least amount of effort and time. Well worth the money.
I just wanted to do an update to my previous review. I have had my Edge Pro for over 5 years now and it never stops impressing me and my friends!! This is a system that will give you the confidence to sharpen any knife that you own or your friends. After a few months I was brave enough to sharpen one of my Jimmy Lile collectable's. The edge looks as professional as the knife itself. After all these years the customer service has not dropped off at all.Other than replacing a few stones the system is in as good of shape as the day I purchased it. Customer Service is a 5 star rating along with their product!! If you are looking for a failsafe sharpening system spend the money and you won't be dissapointed!!
I purchased a professional model last year after struggling with japanese whetstones for years - now i have razor sharp cooking knives with beautiful smooth edges - this product is simply perfect for the job

I have had my pro 3 kit for a couple of years and I must say that it is just great. I just finished polishing up around 15 knifes for my entire family, it is such a nice thing. I do not need all the polish tape and such wich are includet, put the hard case is prizeless!

The Edge Pro system is awesome! It came neatly packed in it's case, had my name, Ben's name, and the date written on the bottom...very personalized service! As for the Edge Pro itself, it has produced the sharpest edges I've ever seen on a knife. The tapes give the edge a mirror-like shine. It's easy to use, but make sure you watch the video first. As several others have mentioned, I've wasted at least the cost of this system on many sharpeners in the past, none of which come close to this one. Thanks Ben!
I have had mine for a year plus now. Short and sharp: Absolute best product out there with support to match. Do yourself a favor and purchase this first, instead like me..last, having wasted time and money on other products.
